High Protein Egg White Omelette

When I have time in the mornings to make my breakfast, this high-protein egg white omelette is a dish I always look forward to! This versatile recipe is easy to make your own, and I’ve listed my favorite additions in the ingredients list below. If the ingredients don’t have a quantity, measure with your heart. If you need extra protein, you can always add more egg whites or add some low-fat Mozzarella cheese.


  • Olive oil (Spray)
  • 150g liquid egg whites (about 3/4 cup)
  • 1 egg
  • Everything But The Bagel seasoning
  • Chopped red onion
  • Big handful of spinach
  • 1 spoonful of sundried tomatoes, diced or julienned
  • 1 triangle of Laughing Cow cheese (spicy pepper jack is my fave!)


  1. Whisk the egg, egg whites and seasoning in a separate bowl
  2. Heat oil in the skillet and sauté the onions and tomatoes till fragrant
  3. Toss the spinach in and cook for 30 seconds or so
  4. When the spinach is soft, add the egg (whites) mixture, spreading it evenly across the surface of the skillet.
  5. Cook on medium until almost done and flip or fold!
  6. Transfer to a plate and spread Laughing Cow cheese on top
